I wrote the previous post. On my 4th brewing of this recipe I used White Labs California Ale liquid yeast instead of dry yeast. I did not need the blow off tube as the ferment is much more subdued. The liquid yeast took about 16 hours to get going versus the dry yeast which gets bubbling in 4 or 5 hours. Looks like another wonderful brew!

I have brewed this recipe 3 times. This is an excellent IPA recipe. Do use a bubbler in the primary fermenter. Use a blow off tube into a sink instead as this recipe always has a very vigorous primary ferment. A bubbler will foam up and clog up and make a big mess. This recipe is better than the beer you are trying to clone!

I've made this kit twice now, and it is always a crowd pleaser. I've done side by side blind tastings with people, and they picked my brew over the commercial beer EVERY time! Good beer. Great mouth feel. Nice color. Better than the beer it is a clone of!

This is a VERY good IPA, I don't live to far from Victory, and their IPA is one of my favorites! However, I felt this was lacking a little so I threw 2 oz of Cascade whole leaf in a muslin bag and threw that in the keg while I am drink it down. I guess I just made a double IPA. I bottled some before doing that. Everyone said it was the best IPA I have made to date. My sister in law is a huge Hope devil fan, and I am going to give her a bottle of each and see what her thoughts are. If you like IPA you will like this version, VERY nice taste, and color is spot on to the original. I used a liquid strain of yeast for this one too, CHEERS! :)
