Tripel Karmeliet (18C) - MINI MASH Homebrew Ingredient Kit

Brewed this kit a couple of months ago. In the primary for 10 days. Secondary for a week. Bottled and carbing for 4 weeks. Has many of the same characteristics of Tripel Karmeliet, however, mine came out with a high alcohol taste to it. Temps were right and hope this mellows with time. Also a much darker color than original. I can only attribute this to the malts and long brew time, possibly splitting the malts during brew time will lessen any caramelization. OG and SG were right on the money.

This kit is great. I would highly suggest resisting the urge to add Alcohol Boost. The stock recipe contains plenty of sugar for an accurate high alcohol content, adding boost will give you crazy high content that robs from the taste. Stock the taste is incredible. You have coriander, candi sugar, sweet orange peel... it's fantastic. Note that this isn't a real 'hoppy' brew, so you need to be patient, and follow the directions to the letter, and let the ferment go loooong. The hops won't save you :)
