This was a good beer. It took a while for it to mature but it was pretty good. Next time I do a run of beers with Trappist yeast, I will probably choose another.

I got several trappist ale yeast recipes to brew in the same run, all mini mash. This was my least favorite. Drinkable but not excellent like the others.

My First AHS Mini Mash. Super happy with the results. 4 weeks in primary, 2 weeks in secondary, aged 4-6 weeks in the bottle. Nice malty flavor, good hop finish with a touch of bitterness. I have had many compliments on this brew. I will be trying out the all grain recipe once I switch over. thanks AHS!

Made the mistake of trying this out as my first homebrew. My process was less than perfect so I ended up with a mostly flat and frankly not very tasty brew. Time is healing some of my mistakes. The flavors are begining to open up as the beer ages. I get mostly malty with very small bitter on the back end. If you are making your first beer, spend less and make a more plain kit so you can start improving your process. As far as the kit itself goes it is beer and it is drinkable but my mistakes take too much away from it to attempt to rate it. I may try this again next year so I can tell. With all of that said it hooked me big time and my fifth and sixth kits are on the way to my house.
