Fermentation Temp Range (°F): 60-72
Apparent Attenuation Range (%): 73-77
Flocculation: Medium-Low
Alcohol Tolerance: 11%

Pitching/Fermentation: Produces diacetyl and fusels if the fermentation range is over 71°F or excessively underpitched. Poor attenuation if fermenting below 60°F. Serial pitching will result in an extremely (88%+) attenuative yeast after 6-7 generations. Mild citrus notes develop with cooler (60-66°F) fermentations.

Notes: This yeast is famous for its clean flavors, balance, and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile. Low fruitiness, mild ester production. Normally requires filtration for bright beers.

Alive and active

For a recent batch, I did not have the opportunity to make a starter so I pitched two packs of Wyeast 1056. I was a little concerned because the cooling pack in the box was warm, as were the smackpacks. But come brew day, those yeast cells were very alive and active. Strong, robust fermentation got to my expected final gravity in short order. 4 stars because they arrived hot and it scared me a little. But everything worked out fine!

Good Yeast, think about shipping distance in summer

This yeast is good. I ordered a kit with this in March, with a cold pack. Everything was great. When the beer from that kit was gone, I reordered in July. When I took the yeast and cold pack out of the box, the cold pack was hot and the bag of yeast was about to pop. I was scared to use it. So I put off brewing for a week until my dry yeast arrived.
