Pitching/Fermentation: The London Ale strain is a high attenuator that has obvious English character in its pronounced mineral and mild fruit. It performs best for dry, crisp beers, and in highlighting hop bitterness. For more neutral strains, try West Coast Ale I (OYL-004), or keep the English deportment with British Ale I (OYL-006) or British Ale VI (OYL-013).
