This was my first beer I ever made on my own brewing setup. I had never made a lager before but one of my father's favorite beers is Dos Equis so I thought I would give this a shot. In Dec. 2016 I ordered a brewing setup and a kegerator for myself as a Christmas present. I figured since I had a kegerator and no beer I would use the kegerator as a fermentation chamber for a lager. Brew Day 1/14/17: Starting OG: 1.062 @ 71.2F I did add in the 14oz Corn Sugar for the 1% ABV Boost. I put the wort in the kegerator using an Inkbird temp gauge between 50-51F. Day 9: 1/24/17 Fermentation died down and I moved the primary carboy into my closet to warm up. Day 12: 1/27/17 Fermentation was very slow and temp was at 63F in my closet. Day 13: 1/28/17 I racked the lager into secondary and placed into my kegerator at 55F Final Gravity: 1.012 (6.56% ABV) Day 14: I dropped the temp to 50F and I continued to drop the temp by 5F each day until I reached 35F I kept the beer at 35F for the rest of the time and gave it another 30 days which put it at about 8 week total before I kegged the lager. I had a bunch of people try this beer and everyone loved it. I was super amazed it tasted so damn good for my first beer. I had a bunch of people tell me that it actually tasted better than the Dos Equis. The one thing we noticed is the beer actually started tasting better over time, so I would say if you have the time I would give this beer 10-15 weeks rather than just 8 as the instructions recommended.
