Third AHS kit I've brewed. Did the mini-mash version with DME, two vials of White Labs San Diego Super Yeast, and the alcohol boost. There are a LOT of hops in this kit...definitely keeps you engaged during the boil. I think there's going to be a couple of inches of sediment from the hop pellets. Read the reviews on AHS Double IPA regarding violent fermentation and need for a blowoff tube. I started primary in the basement (~60F), then moved it upstairs when I wasn't getting a whole lot of visible fermentation after 24 hours. Once the fermenter was in a warmer environment, it really got going for about 36-48 hours. Glad I ended up rigging the tube! Seven days in primary today and I'm going to transfer to secondary and dry hop.
Following up. I had the beer in secondary for 14 days before racking to a keg (This was my first try at kegging and it's purely wonderful). Because of the amount of hop sediment from dry-hopping, I decided to rack through some extra-fine cheesecloth. It worked like a charm; no sediment, even on the first pull. This beer is far and away the best I've brewed. Incredible hoppy-ness with a great bitterness that perfectly (for an IPA) outweighs the strong malt backbone. I ended up at ~7.5% ABV and find the beer dangerously drinkable. This is the first beer I've brewed that I'm eager to drink (as opposed to drinking it because I brewed it) and I couldn't be happier. I am not sure if my last comment went through. What I was saying is I recommend making this beer with about a 5 1/2 - 6 gallons in the primary since you loose a lot of that beer when moving to a secondary. I will let everyone know the taste of it once I am finished. I did order another batch to boil a 6 gallon wort to see if that will help the transfer for a full 5 gallon
