Wow what a beer... VERY stong but great flavor. Not for the faint of heart. This brew will defintely warm you up on those cold winter days.

Brewed this on 9/16/2011 with Safbrew T-58 yeast double pitch. Used blow off tube. 9/27 racked to secondary. 10/9 bottled. 8.7% ABV. This is a wonderful Belgian that is not too spicy. Good color, body, taste, balance. This beer really does get better as it ages. Was a bit too sweet with too much alcohol taste on 11/5/2011. Better on 12/15/2011. Great on 2/3/2012. I am very partial to Belgians and have brewed many. This one is very good after conditioning for 5 or 6 months. I am glad that I made it and will do so again

I've brewed Belgian Noel twice already on a mini-mash (with the extra 1% booster). Twice already it has turned out very tasteful. It has a nice rich amber color and very sweet to the taste. I wouldn't mind brewing it all year long...

I brewed this beer in November of 2008. It was a good beer but had a bit of sharpness to it. I set the keg aside until last week (12/08/ 2009). I tapped it and is is now a great beer! Very smooth with a lot of character!
