This kit includes Koji enzyme and makes 5.8 gallons (22 L) of traditional Sake. Required for the sake kit but not included are citric acid, sake yeast, and cracked rice

Since the rice will expand considerably in the water, we recommend that two 7 gallon or a larger fermenters be used to accommodate the rice.
